     Chicken Provencal Soup

Ingredients
2 chicken breasts
salt to taste / pepper to taste
1/4 c olive oil plus additional for drizzling chicken
1 small onion diced
3 stalks of celery chopped
3 carrots peeled and diced
2 garlic cloves minced
1/2 c dry white wine
1 14.5 oz can diced tomatoes undrained
 
1 quart chicken broth
1 sprig fresh rosemary
1 T fresh chopped basil
cooked cavatappi pasta about 1/4 c per person
shredded parmesan cheese for serving

Instructions
Sprinkle chicken with salt and pepper and olive oil and Roast chicken in oven at 375 degrees until done. In heavy soup pan heat 1/4 c olive oil, over medium heat add veggies and saute until opaque. Add wine to pan, loosening up the bits of bottom of pan, add tomatoes with juice, broth, rosemary, and basil. Bring to simmer and cook until carrots are tender, cut chicken in chunks and add to soup with pasta. Garnish with parmesan cheese
