     Chilled Snap Pea & Coconut-Ginger Soup

Ingredients
1.5 lbs snap peas, ends and strings cleaned/trimmed, peas small chopped
1/4 c white parts of spring onion or scallions, chopped small
2 inch piece ginger root, peeled and finely minced
2T fresh mint, cilantro or parsley leaves, rough chopped
3 c full fat coconut milk, chilled
1/2 c freshly squeezed orange juice
1 large, ripe avocado, pit removed and flesh scooped out
2 cloves garlic, peeled and chopped
1T honey or maple syrup
 
2 tsp. favorite curry or spice blend
2 tsp. salt

Instructions
Combine all ingredients in blender. Puree for several minutes until fully pureed.
Strain through fine mesh sieve into large bowl. Taste and adjust to add more salt, honey or spice to taste.
Serve immediately room temperature or refrigerate and chill, covered tightly with plastic wrap.
Serving Suggestions
Garnish with additional fresh herbs if desired or dollop with creme fraiche or Greek yogurt.
