3 very ripe medium-sized bananas, peeled and mashed (about 1 cup)
1 large egg, lightly beaten
1 large egg white, lightly beaten
1 teaspoon vanilla
1 3/4 cup cake flour
1/4 teaspoon salt
1 teaspoon baking soda
Instructions
Preheat oven to 350. Spray a standard size (9x5 inch) loaf pan and
set aside.
Ina medium size bowl, combine the sugar, butter, and applesauce
and stir together until smooth. Mix in the bananas, egg, egg
whites and vanilla.
In a separate bowl, sift together the flour, salt and baking soda.
Fold into the banana mixture until just combined. Pour batter into
the prepared pan. Bake until knife inserted in the center comes out
clean, about 5 minutes. Set on a wire rack to cool.
