     Panera Bread Granola

Ingredients
3 cups old fashioned rolled oats
2 cups chopped pecans, can add slivered almonds
1 cup shredded coconut (unsweetened)
1/2 cup dark brown sugar
1/2 cup pure maple syrup
1/4 cup vegetable oil (canola)
1 teasp. vanilla extract
3/4 teasp salt
1/2 teasp cinnimon
 

Instructions
In a large bowl, combine oats, nuts, coconut and brown sugar. In a small bowl, whisk syrup, oil, vanilla, salt and cinnamon. Pour over oat mixture and stir to coat. Spread on two large baking sheets in a single layer…leaving an empty circle, 5 or 6 inches in diameter in the center..promotes more even baking.
Bake 1 hour, 15 minutes, until crisp. To make crispy clusters, whisk one egg white into syrup mixture. Let granola cool completely on pans, then break into clusters. Store in airtight container for up to two weeks.
