     Pasta Carbonera

Ingredients
1 lb thin linguine
2 tbl olive oil
4 oz pancetta cubed
4 finely chopped garlic cloves
3 lg eggs
1 C grated cheese
Black pepper
Fresh parsley
 

Instructions
Boil lg pot of water...add salt...In skillet saute pancetta with olive oil...cook until crispy...add linguine to water and cook just under al'dente drain and reserve 1 C pasta water...add pasta to pancetta and toss for 2 minutes...remove from heat and quickly mix in eggs mixed with grated cheese...stir until egg thickens...use pasta water to get the right Constance for you...add black pepper and parsley and serve
