1. Preheat oven to 375 degrees F. Lightly spray a
baking sheet with nonstick cooking spray; set
aside. Combine the parmesan and bread crumbs and
spread on a large plate. Lightly beat the egg and
mustard in a shallow bowl.

2. season the chicken with the garlic salt and
pepper. Dip each chicken breast into the egg
mixture and then dredge in the bread crumb mixture
until evenly coated. Shake off any excess bread
crumbs.

3. place the chicken on the prepared baking
sheet and lightly coat with nonstick cooking
spray. Bake until golden brown and cooked
through, 20-25 minutes. (Chicken is cooked
through is juices run clear when chicken is
pierced with a knife). Garnish with Parsley and
serve.

Serve with baked french bread slices brushed with
olive oil and sprinkled with crushed garlic and
parsley.Add steamed zucchini sticks to the dish
for extra color and nutrients.
