     Bonnie's Couscous Salad

Ingredients
8-10 oz. couscous
Half package currants (extra if desired!)
1 can corn, drained
1/3-1/2 head iceburg lettuce, finely chopped
1 tomato, chopped
handful fresh basil, finely chopped
2 1/2 t. salt
2 T. lemon juice
2 T. olive oil
 
1/4 c. ranch dressing

Instructions
Boil 2 cups water with olive oil and 1/2 t. salt. Pour onto couscous, cover and let set making sure to stir away lumps. Fluff and set in refrigerator to cool.
Combine currants, corn, lettuce, tomato, basil, lemon juice, and remaining salt into bowl. Mix well.
Add couscous, mix well. Drain excess water. Add ranch dressing, mix well.
