     Vegetarian Vegetable Soup

Servings   50 8 oz

Ingredients
2 gallons LS vegetable stock
2 cups diced carrots
3 cups diced celery
3 cups diced onion
1 lb cubed potatoes
1 number 10 can diced tomatoes
4 cups diced cabbage
other vegetables may be added as desired and available
1 tsp black pepper
 
1 Tbl dried basil
Season to taste

Instructions
1) Cook until all veggies are tender, approx. 1 hour. 2) Hold at temp. above 135' CCP- Cool leftovers to below 41' within 2 hours. Reheat to 165' within 2 hours if reusing.
