     Minestrone Soup

Servings   50 8 oz.

Ingredients
1 lb diced bacon, fried until crisp
1 1/2 c diced onion
2 Tbsp minced garlic; sautee onion and garlic in bacon fat
2 gal LS beef stock
1 qt.Cabbage, chopped
3 c diced carrots
3 c diced potatoes
2 c diced celery
3 c chopped spinach, fresh or frozen
 
3 c frozen green beans
4 c. canned diced tomatoes
4 c canned red beans
2 c small dried pasta ( optional- macaroni, broken spaghetti, orzo)
1/4 tsp black pepper

Instructions
1) Simmer all ingredients until all veg are tender. a thicken with a paste of 1/3 c flour to one cup cold water. CCP- Hold at 135' or higher. Leftovers must be cooled to 41' within 4 hours. Reheat to 165' within 2 hours.
