     Split Pea Soup

Servings   50 8 oz.

Ingredients
3 lbs split peas, washed
2 gal water;
Boil peas for 2 minutes, turn off heat, Cover and let stand 1 hour to soften
2 lbs diced Ham plus 3 cup diced onions
3 1/2 cups fresh, chopped carrots
4 cups raw potatoes, diced
Cook for 1 hour or until peas are soft
Add 2 qts LS chicken or vegetable stock
1 tsp black pepper
 
Thicken if desired or puree to smooth consistency

Instructions
If too thick, add hot water todesired consistancy. CCP- Hold at temperature of 135' or higher. Cool leftover product to 41' within 4 hours. May be reheated to 165' within 2 hours
