     Baked Ziti with Meat Sauce

Ingredients
5 lbs bulk Italian Sausage
6 lbs Ground Beef
2 cups finely chopped onions - Saute onions with ground meats
Sauce- Combine ingredients and simmer; adding cooked meat
2 number 10 cans crushed tomatoes
1 small can tomato paste
1Tbsp dried basil, 2 tsp died oregano, 1/2 tsp black pepper, iTbsp garlic powder
1 c red cooking wine and 1 56 oz Tomato juice
3 cups fresh sliced mushrooms
 
4 lbs ziti cooked to al dente in 3 gallons of boiling water; Drain
2 lbs shredded Mozzarella cheese
2 lbs sliced provolone cheese

Instructions
1) Layer each greased pan with sauce,half of cooked pasta and Top with sauce. 2) Top with shredded Mozz cheese and sliced provolone CCP- Cover and bake until internal temp of 180' is met. Hold at 135' or greater until service. CCP- Cool leftovers to 41' within 4 hours. Reheat to temp of 165' within 2 hours.
