     Sausage with Onions & Peppers

Ingredients
4 sausage links (Southwest chicken are great)
1 green pepper, sliced thin
1 red pepper, sliced thin
1 sweet onion, sliced thin
2-3 gloves garlic, minced
1 tsp salt
1 tsp pepper
1/2 cup fresh basil, chopped
1 tsp. oregano
 
1 tsp. dried thyme
1-2 tbsp. Worcestershire sauce
Splash of red wine

Instructions
Heat 1 T. olive oil in a large skillet on medium high heat. Sear sausage links on two sides, approx. 5 minutes per side. Remove and set aside
In same skillet, add peppers, onions, salt and pepper. Cook until they are translucent and browned, approx. 10 minutes. Stir often. Add garlic, basil, oregano and thyme. Cook 5 minutes.
Add Worcestershire and wine and cook for 5 more minutes or until desired color has been achieved.
Serve with avocado. Also great with pita bread / on a sandwich.
