Prep the sweet potatoes (can do a day ahead of
time). Pierce the potatos and place on a foil-
lined baking sheet. Bake at 400 degrees for
approximately 45 minutes, or until the inside
is cooked and soft. Once cool, scoop out the
sweet potato from the skin and mash until lumps
are gone. Measure out 3 cups worth of filling
(3-4 large potatoes or 6 small to medium
potatoes)

To make the muffins- Combine flour, cinnamon,
baking soda, baking powder and salt in a large
bowl. Combine sugar, oil, eggs, and vanilla in a
separate bowl. Stir the wet ingredients into the
dry ingredients and then add the sweet potato.
