Ingredients
-
5 Large Medjool Dates (about 1/2 cup)
-
2 cups Raw Pecans
-
1 Tbsp Orange Juice
-
4 Apricots
-
4 Kiwi
-
˝ cup Fresh Raspberries
 

Instructions
Preheat the oven to 275. Grind the pecans in a food processor with the “S” blade until fairly fine. Tear the dates in half, remove the pits, and put the dates in the food processor. Process to integrate them into the pecan flour.
Add orange juice and process. It will form a ball of dough. Take this mixture and press into a pie pan or tart pan. You can make mini tarts by modeling them freeform. Make any shape you like and pinch the edges up to form the sides.
If free forming, make them right onto a cookie sheet. Stab bottom of the pie crust or the little tart shells with a fork once or twice.
Bake for 10 min. to firm outside of crust while keeping insides moist. After it has cooked, arrange a rainbow of apricot and kiwi slices in the crust and dapple with raspberries.
Serving Suggestions
Makes 4 individual or 8 tiny tartlets.
