     Pepper Steak

Servings   50 6 oz servings

Ingredients
13 lbs beef strips
2 qts LS Beef stock
1 No. 10 can diced tomatoes
2 c. chopped onions
2 Tbsp minced garlic
12 fresh green peppers, halved and sliced
2 tsp black pepper
4 cups sliced fresh mushrooms
Combine the following into a smooth paste and add to met and veg mixture
 
1/4 cup cornstarch
2 1/2 cups cold water
1/2 cup lite soy sauce
serve over 1/2 cup cooked rice

Instructions
1) Cook meat until lightly browned, about 10 minutes. 2)Add stock, tomatoes, onions,seasonings and simmer 1-1/2 hours. (If using pre-cooked beef strips, simmer only 30 min. 3)Add green peppers and mushrooms cooking only until tender but firm.4) Add thickening paste and cook until thickened, about 5 minutes. CCP-Hold for service at 135' or higher. Cool leftovers to 41' within 4 hours. Reheat leftovers quickly to 165' within 2 hours
