     Sesame Chicken

Ingredients
500g Chicken
2tbsp Sesame Oil
Ginger
3tbsp Cooking rice wine (Sake/Shaoxing)
2tbsp Dark soy sauce
2tbsp Light soy sauce
1 tsp Corn starch
Pepper
Spring Onions (Optional)
 
Intuition (Important)

Instructions
Preparation 1) Cut 500g chicken into bite size 2) Marinate with dark soy sauce, light soy sauce, wine, 1tbsp sesame oil, pepper and corn starch 3) Cur ginger into strips
Cooking 1) Pour 1tbsp Sesame oil on pan 2) Heat pan on high heat till pan is very hot (Can be smoking a little but not too much) 3) Add ginger strips and fry them till fragrant 4) Add chicken and all the marinate 5) Stir fry quickly as pan is very hot and chicken will stick 6) Keep frying till chicken is cooked through (This is the tricky part, you do not want to overcook the chicken cause it will become dry, this is by intuition and experience, if there is too much liquid coming out of the chicken, they are overcooked) 7) Garnish with spring onion
Remarks 1) Adjust condiments to taste and adjust according to larger/smaller portions. 2) Add more corn starch to thicken sauce if there is too much liquid in the pan. 3) Sauce is dark colored so it will be hard to see if chicken is fully cooked through (use intuition!) 4) Chicken will continue cooking after pan is taken off heat so do not overcook chicken
