     Mediterranean Turkey Burgers

Ingredients
2 eggs, beaten
2 garlic cloves, minced
4 ounces crumbled feta cheese
10 ounce box frozen spinach, thawed and squeezed dry
2 lbs. ground turkey
1/4 c. dry bread crumbs
1/4 c. chopped parsley
1 Tbls. lemon juice
Salt and pepper to taste
 
Tzatziki Sauce
1 large English cucumber, peeled and grated
1/2 tsp salt
2 c. plain greek yogurt
4 cloves garlic, minced
1/2 lemon, juiced
2 Tbls chopped fresh dill and 1 Tbls chopped fresh mint
1/2 tsp salt and 1 pinch cayenne (or to taste)
English cucumber and red onion for burgers

Instructions
Combine all ingredients; shape into 8 patties. Refrigerate patties until firm (about 30 minutes). Grill over medium high heat 15-20 minutes, flipping half way through.
To make Tzatiki Sauce, sprinkle grated cucumber with 1/2 tsp salt in a bowl and let stand for 10 to 15 minutes to draw out juice. Then dump cucumber on a clean cloth and squeeze as much moisture as possible out. Place yogurt in separate bowl. Mix in squeezed cucumber, garlic, cayenne, and lemon juice. Stir in dill, mint, and additional salt and pepper to taste. Cover bowl and refrigerate at least 3 to 4 hours or overnight.
When ready to serve burgers, top each patty with Tzatiki, slices of English cucumber, and slices of red onion. May serve burgers in pita pockets, regular hamburger buns, or wrapped in lettuce leaves.
