Assembly-
Combine gin, lime juice, Aperol, 1 tablespoon of honey syrup, and 2 dashes of Angostura bitters in a cocktail shaker. Fill with ice. Cover and shake until the outside of the shaker is frosty, about 30 seconds. Strain into 2 chilled coupe glasses. Top off each with Champagne and garnish with a lime wheel.
