Preheat oven to 150C and grease a 20cm square cake
tin.

Remove sultana stems. Place sultanas in a saucepan
and cover them with cold water. Bring to the boil
and then drain off water. Stir in butter and set
aside to cool.

Beat together the eggs, essence and sugar. Add
sultanas. Sift in flour and baking powder and
stir.
|
|
|
Pour into cake tin and bake 1 1/4 hours or until
skewer clean. (I covered with tin foil for end as
browning too much)
