     Stuffed Pepper Soup

Ingredients
1 lb. lean ground beef
onion, chopped
celery, chopped
29 oz can diced tomatoes
1 can beef broth
10-14oz Rotel or tomato sauce
spices/sauces of choice- salt, black pepper, Lawrey's...whatever you use for stuffed peppers
3-4 large bell peppers (green, red, yellow, orange) chopped
1/4 - 1/2 cup rice, depending on how thick you want your soup
 

Instructions
Brown ground beef. Add onion and celery; Saute for 5 minutes
Add beef broth, tomatoes, Rotel or tomato sauce and spices/sauces; Reduce heat and simmer 30 minutes
Add rice and peppers; Simmer additional 45 minutes for brown rice, 15-20 for white rice
FYI...I use brown rice because it holds together better
