In a large mixing bowl dissolve 2 Tbsp yeast in
3 cups warm water. Add 2 Tbsp sugar and 3 tsp
salt. Mix in 4 cups flour until smooth, then 2
cups, then 1 cup, and then 1/2 cup. (Or
substitute 2 cups ground whole wheat flour.)
Knead. Cover with greased plastic wrap and let
rise until double. Divide dough in half (dough
will be stiff) and roll into long rectangle.
Fold up sides and pinch together. Put both
pieces of dough onto a greased cookie sheet and
cut slits with knife (approximately 1-inch
deep) every 2-3 inches. Let rise. Brush with
egg white, if desired. Bake at 400 degrees for
25 minutes.
