To make it, brown the sausage and set it aside.
Then, dice 4 peeled sweet potatoes and one
onion. In a large skillet, heat 2 tbsp Ghee and
sauté onions for 3-5 minutes. Add sweet
potatoes and pour in enough veggie or chicken
stock to cover. Simmer until potatoes are soft
and liquid is absorbed. Add sausage back in.
Top with two fried eggs.
