For Pulled Pork-
- Chop onion, place it in the slow cooker, and
put the pork tenderloin on top.
- Add 2 cups veggie stock, ½ cup apple cider
vinegar, 1 whole dried chipotle pepper, a
splash of coconut aminos, and a tbsp of Sesame
Oil.
- Cook on low all day and shred before serving.
Add 1/2 sliced or diced avocado on top before
serving as well.
For Coleslaw-
- Combine cabbages, carrots, pineapple, green
onions, and chicken in a large bowl.
- Mix remaining ingredients to create the
dressing and pour over slaw, tossing to coat.
-Top with toasted almonds and/or sesame seeds
when serving.
