     Bread - Banana Bread

Ingredients
2 very ripe bananas mashed
1 cup white sugar
1/2 cup canola oil
1 TB milk
1/2 tsp salt
1 tsp baking soda
2 cups flour
1/4 to 1/2 cup unsweetened applesauce
1 cup pecans or walnuts
 
(optional- chocolate chips)

Instructions
Set oven to 300 For best results grease and flour a bread pan instead of spraying with non-stick spray. Mash bananas in bowl and add sugar,oil and milk. You can use a hand mixer but don't over mix as you still want a few banana chunks. Add salt and baking soda until combined. Add flour by hand, alternating with applesauce so consistency is easy to stir. Should not be like bread dough...more like a thick cake batter. If too thick add more applesauce. This makes the bread super moist too. Fold in nuts or chocolate chips. Bake for 60-70 minutes- checking for doneness at 1 hour.
Sometimes I divide batter into 2 small bread pans instead of 1 large one so the center is sure to cook through. Just watch the cook time. May need to take it out sooner.
Remove from oven and let rest for 15 min or so. Then gently run a knife around edges of bread and remove from pan to rest on a cookie rack so air can circulate under the bread and help cool it.
Serving Suggestions
Spread a slice with peanut butter for a bite of heaven!
