     Soup, Vegetable Broth with Ground Beef

Ingredients
2 TBS peanut oil
4-8 oz ground beef
1 lg white onion, finely chopped
1 clove garlic, crushed
1 or 2 fresh green chiles finely chopped
6-12 almonds, processed into flour
1 large carrot, grated
1 tsp brown sugar
4 cups chicken stock
 
8 ounces baby spinach, finely shredded
7 oz corn, fresh or frozen, about 3 ears off cob
1 large tomato, seeded and chopped
juice of 1 lemon
salt

Instructions
Heat the oil in a pan, add the beef, garlic and oil. Cook until the meat changes color. Pour in stock and bring to a gentle boil.
Add remaining ingredients, simmer about 3 minutes. Do not overcook.
