2 bunches of Celery - hand chop one bunch, finely process the 2nd
Mayonnaise - 2 C
Salt & Pepper - to taste
Cayenne - 2 - dashes
Garlic Powder - Tbl
Parsley - Tbl
Lemon Powder - 1/2 tsp
Stevia - 1/4 tsp or less. Can use sugar or other substitutes
Instructions
Use a processor to finely chop turkey
First batch of celery, process until almost juice. The second batch hand chop to small pieces.
Process onions until almost smooth.
Mix all together in a large bowl.
Add salt, pepper, garlic, lemon, and parsley to the turkey mix,and mix well..
Add mayonnaise, mix well.
Add Cayenne and mix again.
Chill for an hour to let the seasonings settle in.
Note that these amounts can easily change to your taste and texture preferences. Texture and mouth feel are important! I process the onion and 1 bunch of celery until almost juice to add more moisture and less mayonnaise.

Serve as a sandwhich or just on a nice leaf lettuce.
