Dice up onions, peppers,zucchini,and squash. Roast
them in the oven on cookie sheets, sprinkled with
salt and pepper dry them out for a little bit (on
425 for about 15 minutes).
Put it all in a pot, add ketchup, brown sugar,
brewed coffee, beans, seasonings, salt and pepper
to taste and simmer for at least an hour for it
to thicken.
