Ingredients
2 large eggs beaten
454g water at 32.2 C
2 3/4 tsp instant yeast
1/3 cup nonfat dry milk powder
957g all purpose flour
3 tbsp sugar
2 tbsp unsalted butter softened
2 tsp salt
 
1 1/4 lbs butter

Instructions
1. mix eggs, yeast, water and dry milk powder in mixer for 30 seconds
2. add flour, sugar, butter and salt. mix 4 mins until cleanup stage. mix 1 more min.
3. knead for a couple of minutes and let sit at room temperature for 30 min.
