     stuffed chicken capons

Ingredients
dark meat chicken cutlets with the skin on
apricot jam
stuffing-
chopped mushrooms
chopped onion
salt
garlic cubes
chopped celery
 
whole wheat mini croutons

Instructions
chop first 5 stuffing ingredients in mini food processor. saute in pan with olive oil. add whole wheat mini croutons and apricot jam to mixture and mix well while heating in pan.
roll mixture into each capon. season top with garlic powder and paprika and apricot jam.
bake covered at 375 for 1 hour. brown for 15 minutes uncovered.

i sometimes prepare the whole recipe and freeze before cooking fresh.
