     Pao-de-Querijo -Cheese Balls

Ingredients
17.5 Sour Starch or Tapioca Flour
1 c. Vegetable Oil
1 c. Water
1 tsp. Salt
4 Large Eggs
4 c. Shredded Parmesan Chesse
1 c. Milk
 

Instructions
Pre-heat oven to 400 F 1. In the bowl place the flour, Wet the flour with room temp. water, this is what will help hydrate the flour. 2. After adding the water, knead the dough with both hands to break up all the little stones created from the adding the water. 3. In a medium saucepan, heat the oil, milk and salt over moderate heat until it comes to a boil. 4. Turn off the heat and let it cool slightly, Remove from heat and it to the flour, mixing and kneading with your hands until all incorporated. 5. The dough begins to have more consistency, Knead it for a few more minutes and the eggs one by one. 6. Finally, add the grated cheese and Knead some more - Dough will be quite sticky. 7. Put some oil in your hands to keep the avoid the dough from sticking to your hands. 8. if dough is too soft, add less eggs- if it's too dry - add a little milk. 9. Shape dough into small balls and bake until golden on the top about 25-30 minutes.
