     Kale and Chorizo Soup

Ingredients
1 1/2 Tbsp olive oil
2 c chopped yellow onion
6 garlic cloves minced
7 oz dry cured spanish chorizo diced make sure firm cured not soft raw
6 c unsalted chicken broth
3/4 tsp salt
1/2 tsp crushed red pepper
1 1lb small red potatoes
14.5 oz can unsalted diced tomatoes drained
 
12 oz curly kate tough stems removed leaves torn

Instructions
heat oil in a dutch oven over med, add onion and garlic cook stirring occasionally until tender about 5 min, add chorizo cook stirring occassionaly 3 min. Add stock salt pepper potatoes and tomatoes increase to high and bring to a boil. Partially cover pan reduce heat to med-low and simmer 15 min. Stir in kale and simmer until potatoes are tender and kale softens about 5 min.
