     Chicken Sausage and Peppers with Sweet Potato Rice

Ingredients
1 tbsp olive oil
9 - 10 oz chicken sausage
1 yellow pepper
1 red pepper
2 medium sweet potatoes
1 tsp oregano
2 cloves garlic
2 celery ribs
1/2 cup red onion
 
1/2 cup and 1 Tbsp chicken broth
2 Tbsp tomato paste
1 tsp paprika

Instructions
1. Cook sausage and pepper in olive oil until sausage is brown and peppers are softened. Transfer to plate. 2. Shred sweet potatoes until rice like. Add garlic, celery, and onions to pan. Cook for 30 seconds then add 1 Tbsp of broth. 3. After onions become translucent, add paste and then stir so it coats the vegetables. 4. Add rice, spices, and let cook for 1 minute. 5. Add chicken broth, covered for 5 minutes, stirring occasionally. Add meat, peppers, and cook until rice is cooked through.
