Kale
Lime

Instructions
Prepare kale salad- REMOVE the tough ribs from the leaves. Use a knife to slice out the stems or just pull the leaves from the ribs with your fingers. The ribs are too chewy and distracting to include in the salad, but you can chop them and sauté them later. Or feed them to your dog. CHOP the kale into small, bite-sized pieces. Next, transfer the kale to a serving bowl and SPRINKLE it lightly with sea salt (salt helps cut the bitter flavor of kale). MASSAGE kale. Reach into the bowl with (clean) hands and start grabbing handfuls of kale. Scrunch, release, scrunch, release. Repeat until the kale is fragrant and dark green. This makes the kale less poky and more palatable. Kale is tough, so don’t worry about damaging the leaves! This step should take 30 seconds or so. ADD copious amounts of fresh lime, a bit of cumin, paprika and cayenne and let sit marinating at least 15 minutes.
Saute diced red pepper. Prepare either rice, refried beans or ground beef to make up 1/2 the bulk of the burrito (kale will be the other half). I've added a strip of chopped bacon to rice before and it was awesome. Flavour filling with garlic powder, lots of cumin, some paprika and cayenna and lime juice
Assemble burrito! My favourite fillings are raw red onion, tomato, chopped chili peppers and a bit of grated cheese
This recipe actually works with spinach as well - I've used frozen spinach and just heated it and used it as 1/2 the burrito filler and it was awesome
