     Sundried Tomatoes

Ingredients
Tomatoes (tiny ones work best but large ones are ok)
Olive oil
Salt & pepper
Fresh thyme or other herb of choice
Several cloves of garlic
 

Instructions
Cut tiny tomatoes in half and arrange on a baking sheet with the cut side up. If you're using large tomatoes, cut up and remove middle bit with juice and seeds (this can be set aside and added to pasta sauce)
Drizzle with olive oil, not much, just enough to make them glisten a bit
Add salt and pepper. Cut fresh thyme and sprinkle over. Crush cloves of garlic and add them here and there leaving them whole
Set oven to low (100-150C) and leave them in for 3- hours. When you turn off the oven, try not to open it but let them sit for another 30- 60 minutes. They can be used to make pasta sauce, eaten in salad (see goat's cheese salad recipe) or I just like to snack on them. I keep them in a little tupperware guy in the fridge
