     California Blend Cheese Soup

Ingredients
1 small head cauliflower, bite sized
1 bunch broccoli, bite sized
1 lb carrots, bite sized
1 small onion finely chopped
2 tbsp olive oil
4 tbsp butter
2 tsp gluten free flour
4 c chicken or turkey stock
1 c milk or half n half
 
2 1/2 c shredded cheddar
2 tbsp dijon mustard
salt and pepper

Instructions
Note- sometimes I use a large package of veggies already cut up. Melt butter and oil. Add onion and cook 4-5 minutes. Sprinkle flour over and stir to absorb the oil. Cook 2-3 minutes. Season with salt and pepper. Whisk in chicken stock and then milk. Add cheese and stir till melted. Add veggies then mustard. Bring to simmer until veggies are cooked being careful not to boil soup.
