     Aspargus pie

Ingredients
3 lbs fresh aspargus
2 to 3 eggs
1 cup to 2 cups italian bread crumbs
1/4 cup oil
grated parmesan cheese
 

Instructions
chop aspargus into bite size piece . in large frying pan add enough water to bring to boil. boil until tender ..drain
in bowl add all indegerients from above stir well to make sure all is coated. in frying pan heat oil.. when oil is hot add the mixture and flatten out to size of pan round shape. cook on medium heat until brown. drain oil into a cup ..with care flip the pie onto a plate with cooked side up then gently add oil back into pan and continue to cook until golden brown..
i think its best served chilled with some italian bread ..but can be served warm with sliced american cheese and italian bread
