     Balsamic Roast Beef

Ingredients
1 3-4 pound boneless roast beef (chuck or round roast for pot roast)
1 cup beef broth
½ cup balsamic vinegar
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon honey
½ teaspoon red pepper flakes
4 cloves garlic, roughly chopped
Ciabatta bread
 
Provolone cheese

Instructions
Place roast beef into the crock pot. In a bowl, mix together all remaining ingredients. Pour over roast beef, flip the roast beef several times to incorporate in the sauce and then set the timer for your crock pot. (4 hours on High or 6-8 hours on Low)
Once roast beef has cooked, remove from crock pot with tongs into a serving dish. Break apart lightly with two forks.
Use a fat separator on the au jus and then pour au jus into a saucepan over medium heat. Simmer until the gravy has reduced by half.
I like to eat pot roast after it sat overnight so the flavors can melt. Cut the bread in half. Toast. Then top with warmed roast beef and provolone cheese. Dip into au jus.
