20 oz can chunk pineapple (or chopped plums, peaches, cherry, or other desired fruit)
1 jar orange marmalade (or other preserves)
1 large apple, grated (or finely chopped)
1/2 tsp baking powder
1/2 pd butter (you can substitute vegan butter)
1/4 cup cinnamon and sugar mixture (mostly sugar, just a little cinnamon)
golden raisins (optional)
8 oz cream cheese (you can substitute cottage cheese or vegan cream cheese)
8 oz sour cream (you can substitute vegan sour cream)
Instructions
Preheat oven to 325 degrees. Grease a large pyrex pan.
For noodle kugel, cook egg noodles and put in large bowl.
For Matzo kugel, soak farfel in warm water for about 10 minutes. Squeeze out excess an water
and pat with dishtowel so not too squishy. Place in large bowl.
Melt butter and let cool.
Grate/chop apples.
In a separate bowl, combine eggs, baking powder, apple, cream
cheese, sour cream, marmalade, and raisins (optional).
Melt butter and add (not hot) to mixture.
Beat mixture until smooth.
Add noodles/farfel.
Pour into pyrex.
Add chunk pineapple over top of mixture.
Sprinkle cinnamon and sugar mixture on top.
Cover with foil and cook until egg is set in center, about 1.5 hours. Check every 20 minutes.
Remove foil and briefly brown top, about 5 minutes.
