     Peruvian Chicken

Ingredients
1/2 TBSP chopped fresh rosemary
1 TBSP ground cumin
3 cloves of garlic
3 TBSP soy sauce
1 TBSP white vinegar
1 TBSP fresh oregano
juice of 1/2 lime
1 TBSP hoisin sauce
1 bottle of beer (lager)
 
1/2 TBSP salt
1 TBSP freshly ground black pepper
1 3-4 lb. chicken, or 4 breasts

Instructions
Combine the rosemary, cumin, garlic, soy sauce, vinegar, oregano, lime juice, hoisin sauce, beer, salt and pepper in a blender and blend until completely combined. Pour the marinade over the chicken in a large ziploc bag and let it marinate for 24 hours. Preheat oven to 400 degrees. Remove chicken from marinade and put on a rack in a roasting pan. Roast until internal temperature registers 165 degrees F on an instant read thermometer, about 1 hour for a whole chicken. Let the chicken rest for 15 minutes before slicing and serving.
