     Brown Sugar Ham Brine

Ingredients
One gallon filtered/distilled water (or boil 5 mins to eliminate chlorine)
3/4 cup pickling salt (or sea/kosher salt), see note 1
1 1/3 cups packed brown sugar
4 tsps Curing Salt number 1, see note 1
Note one... or use 5/8 cup Suprasel (with nitrites) to replace salt and curing salt
 

Instructions
Inject 30 percent by weight (meat) of brine into pork. Immerse in brine, turn daily, for 4- 5 days. Drain, rinse very well to remove surface salt, dry. Then either smoke or roast. Can be stored for a few days in fridge or frozen before smoking/cooking.
