Cut off the top and bottom of the poblano pepper.
Cut down one size and spread open. Remove seeds
and white membrane. Dice.
Add diced pepper and onion to large pan and saute
in oil until onions are clear.

Spread the pepper and onions and cook fish or
chicken 4-5 minutes on each side.
|
|
|
Remove fish or chicken and cover to keep warm.
|
|
|
Add black beans, pineapple and banana. Heat and
serve over fish or chicken.
