     Corn Salsa for Fajitas

Ingredients
2 c frozen corn thawed and cooked
1/2 c diced red onion
1/2 c diced red pepper or so
1 can black beans drained and rinsed so water is clear
cilantro leaves cut up as much as desired
2-3 plum tomatoes diced small
a bit of finely diced jalapeno pepper if desiring more heat
 
Vinaigrette
2 large cloves garlic minced
Juice of 1 lime
3 T chili pepper flavored olive oil or regular olive oil
1/2 t sugar
1 T chili power or so
1 T ground cumin or so

Instructions
Mix together 6 ingredients for Vinaigrette. Add remaining ingredients. Stir well. Let sit overnight or all day. Serve with fajitas as salsa or salad.
