Crust-
Preheat oven to 350
Combine crackers and sugar in large mixing
bowl. Mix well.
Add softened butter and knead until dough comes
together.
Press into 8-inch pie pan.
Chill for 20 minutes.
Bake 15-20 minutes or until golden brown.
Set aside.

Filling-
Combine sugar and cornstarch in medium
saucepan.
Whisk in melted butter.
Pour 1 cup hot water, whisk smooth.
Whish in egg yolks and tbsp of juices.
Cook on low heat for 5-10 minutes until
thickens.
Remove from heat.

Meringue-
Beat egg whites until frothy.
Add sugar gradually while continuing to beat until
stiff peaks form.
|
|
|
Assemble-
Pour filling into crust.
Gently spread meringue over.
Bake for 25-30 minutes.
Cool before serving.
