1 (40 oz.) can sweet potatoes drained or 2 lbs. fresh sweet potatoes, baked and peeled
1 cup sour cream, divided use
1/4 cup milk
1 egg
2 tbsp. packed brown sugar
1/2 tsp. cinnamon
salt to taste
2 tbsp. chopped walnuts (optional)
Instructions
Using electric mixer, whip sweet potatoes, 3/4 cup
sour cream, milk, egg, brown sugar and cinnamon.
Add salt to taste. Pour mixture into 1-1/2 qt.
casserole.
Microwave on medium high (70 percent) 5 to 6
minutes or until thorougly heated. Spread
remaining 1/4 cup sour cream over top and sprinkle
with walnuts.
