     Meatless Zucchini Casserole

Ingredients
6 cups cut up zucchini
2 large grated carrots
1 cup chopped onion
1 Box Savory Herbs Stove Top stuffing
1 stick margarine melted
1 can cream of chicken soup
1 cup sour cream
 

Instructions
Blanch zucchini, carrots and onions for 3 minutes. Drain. Add the soup and sour cream, mix well.
Prepare stuffing according to package directions. Add melted butter mixing well. Put 1/2 of stuffing in 13x9 pan. Cover with vegetable mixture and then top with rest of stuffing. Bake at 350 degrees for 30 mins. Grated cheese can be added the last 5 minutes.
