     Grandma’s Casserole

Ingredients
1 lb Ground Beef
1 small onion, chopped
˝ C Chopped yellow, red or orange peppers
2 C Cooked long grain rice
2 cans (14 ˝ OZ) Diced tomatoes, undrained
1 Can (11 oz) whole kernel corn, drained
1 can (2 Ľ oz) sliced Black Olives
6 strips of bacon, cooked and crumbled
2 t Chili Powder
 
1 t Garlic Powder
1 t Salt
1 ˝ C (6 oz) shredded cheddar cheese, divided
1 C Dry Bread Crumbs
1 T Butter, melted

Instructions
• In a skillet, cook beef, onion, and peppers over medium heat until meat is no longer pink • Stir in rice, tomatoes, corn, olives, bacon, chili powder, garlic powder, and salt • Bring to a boil • Remove from heat • Stir in 1 C of cheese, stir until melted • Transfer to a greased 11 x 9 pan (9 x 13?) Sprinkle with remaining cheese • Toss bread crumbs with butter; sprinkle over cheese • Bake uncovered, 350 degrees for 15-20 minutes or until cheese in melted
