Peel, cube and then boil Yams until soft.
Mash Yams, add in the sugar, butter, eggs and vanilla
Mix Topping and sprinkle over top.
Place in a 9x9 pan
Bake at 350; 30 mins
Note- I always double or triple this recipe. Freezes well; just cook a little longer if using frozen.
