Add just the oats and milk to a blender. Pulse until the oats are ground. Add remaining ingredients to blender and blend. Heat griddle over medium heat and grease. Pour batter onto pan and cook approximately 1 minute or until bubbles break the surface of the pancake and the underside is golden brown. Flip and cook for approximately 30 seconds. Serve immediately. If desired, you can sprinkle chocolate chips on pancake while cooking.
I usually puree my own pumpkin by baking, draining and blending, But if you don't have time, pumpkin or squash baby food is a good substitute!
