     Grandma Davis' Chocolate Cake

Ingredients
1 c boiling water
3/4 c cocoa
1 c oil
1 c buttermilk (or add 1 tsp vinegar to milk and let sit for 5 min)
1 tsp vanilla
1 tsp salt
2 eggs
2 c flour
2 c sugar
 
2 tsp baking soda
Frosting-
4 c powdered sugar
1 stick softened butter (1/2 c)
1 tsp vanilla
pinch of salt
milk or cream to make a creamy consistency

Instructions
Preheat oven to 300 F (170 C). Grease and flour big pan (9x11), or use cooking spray and parchment paper for layer pans. Add cocoa to boiling water. Add oil, buttermilk and salt into cocoa mixture. Beat eggs and vanilla and add to cocoa mixture. Combine flour, sugar and baking soda and add to the rest. Beat at medium high until all ingredients are blended and smooth, about 2 minutes. Pour into pan. Place in oven. Start checking at 35 minutes, continue until toothpick comes out clean. May need to bake for 45 minutes or so.
Frost when cooled.
