water to cover chicken - 10-12 cups

equal parts carrots and celery

double parts sweet onion

peppercorns

dried oregano, rosemary, thyme or other Italian herb

OR herb bouquet of what you have

Instructions |
|
|
Mix all ingredients and bring to boil. Lower heat and let simmer
2-4 hours.
|

Remove large pieces. Strain broth. Use at once or cool and
put in plastic bags and freeze in 2 cup measurements.
